One Pan Roasted Chicken and Veggies

This recipe is seriously the easiest! You just throw everything on a baking sheet lined with aluminum foil and bake. Did I mention that its super healthy too! I use whatever protein and veggies I have in the refrigerator. This recipe has become a weekly meal in our household. It’s budget and body friendly!

  • Pick your protein (chicken breast, chicken thighs, sausage) I use 1-2 breast for my husband and myself depending on the size of the breast.
  • Head of broccoli
  • One red pepper or whatever color you prefer
  • One sweet potatoes
  • One onion
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 /2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  1. Preheat oven 400 degrees
  2. Mix veggies in a bowl with olive oil and spices and add to a lined baking sheet.
  3. Add protein on top of veggies. I typically cut mine into bite-sized pieces. If using chicken season with salt and pepper.
  4. Bake for 35 -40 minutes. Depending on what kind of veggies you use, you might need to adjust your time.
  5. Serve in your favorite bowl and ENJOY!
